If you’ve been subscribed to our newsletter, you’ll know that we’re planning to travel to Japan at the end of November after we finish up here in Bali! The main purpose of the trip will be to explore the extremely diverse cuisine of Japan.

My understanding of the cuisine is limited to sushi (of which I’m obsessed), tempura, gyoza, western-style bento boxes and fried rice. Dariece and I both can’t wait to head to Japan as foodies, in search of the best conventional Japanese cuisine (和食 washoku).

The recipes to choose from are as follows:

1. Wagyu Beef Skewers

These marbled beef delights are cooked with Japanese scallions, sweet potatoes and a maple soy glaze. I’ve never had wagyu beef before, but these were my second choice in the list. chef Dale prepares them with amazing precision and by the time they’re on the plate, they look like a piece of art.

2. Bonito Spiced Tuna

This is my personal preferred of the three. primarily because I love lightly seared tuna, but also because the my mouth watered the most while viewing this video. placed on a bed of pickled mustard seeds and golden beet dashi, this is the most colorful and easy of the three recipes, but probably packs the most flavour.

3. Tea Steamed Red Snapper

Cooked matcha-style verde with crispy brussel sprouts, this dish also looks extremely delicious. I’m not a huge fan of cooked fish (I think it’s so much better raw or lightly seared), but this one is Dariece’s preferred on the list. Matcha is a tea powder that I’ve never tried so I can’t really imagine the flavours of this dish, but I’m now going to see if I can find it while we’re travelling in Japan.
